Ingredients:

  • 1 cup dried gigante beans (or other large white beans)
  • 1 pound cooked turkey, shredded or chopped
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. The dried gigante beans should soak in water for at least eight hours or overnight. Rinse and drain the beans prior to use.
  2. Place a sizable saucepan over medium heat to warm the olive oil. Add the onion and garlic, both minced. Sauté until the onion is translucent and the garlic is fragrant.
  3. To the saucepan, add the drained and soaked gigante beans. Toss the beans in the onion and garlic mixture to coat them.
  4. Add the vegetable or chicken broth along with the diced tomatoes. Add salt, pepper, dried rosemary, dry oregano, and dried thyme.
  5. Heat should be turned down once the mixture comes to a boil. For about 1.5 to 2 hours, or until the beans are cooked through and soft, simmer the beans covered in the pot. If necessary, add extra liquid while stirring occasionally.
  6. After cooking the beans, stir in the shredded or chopped cooked turkey.
  7. Add the grated Parmesan cheese to the pot gradually, stirring until the cheese melts and incorporates into the dish.
  8. Simmer the Parmesan-braised gigante beans with turkey for an additional 10 minutes to allow the flavors to meld together.
  9. If necessary, add more salt and pepper after tasting.
  10. Serve the Parmesan-braised gigante beans with turkey in bowls, garnished with fresh chopped parsley.
