Ingredients:

  • 1 cup blueberries
  • 1 cup pomegranate seeds
  • 1 cup coconut water
  • 1 cup pineapple juice
  • 1 tablespoon lime juice
  • Sweetener of your choice (optional)
  • Ice cubes
  • Fresh mint leaves or lime wedges for garnish (optional)

Instructions:

  1. In a blender, combine the blueberries, pomegranate seeds, coconut water, pineapple juice, and lime juice. Blend the ingredients together until they form a smooth and cohesive mixture.
  2. Taste the mixture and if desired, add a sweetener of your choice to enhance the sweetness. Blend again to incorporate.
  3. Over a pitcher or big bowl, place a strainer with fine mesh. Pour the blended mixture through the strainer to remove any pulp or seeds. Press the mixture with a spoon or spatula to extract all the liquid.
  4. Discard any solids left in the strainer, and transfer the strained agua fresca to the refrigerator to chill for about 1 hour.
